Moong Dal Poori With Aloo Ki Sabji

Ingredients
FOR PREPARING ALOO KI SABJI :
Potato / Aloo - 1
Oil - 1 tbsp
Mustard seeds / Rai - 1/2 tsp
Cumin seeds / Jeera - 1/2 tsp
Asafoetida / Hing - A pinch
Dry red chilli / Sukhi lal mirch - 1
Salt - As per taste
Turmeric powder / Haldi powder - 1/2 tsp
Dry mango powder / Amchur powder - 1/2 tsp
Coriander leaves / Hara dhaniya - A handful (optional)
FOR PREPARING MOONG DAL KI POORI :
Yellow lentils / Moong dal - 1 Cup
Water - As required
Salt - As per taste
Whole wheat flour / Gehu ka aata - 1 Cup
Carom seeds / Ajwain - 1/2 tsp
Dry fenugreek leaves / Kasuri methi - 1 tsp
Turmeric powder / Haldi powder - 1/2 tsp
Red chilli powder / Lal mirch powder - 1 tsp
Oil - As required + For frying

tbsp = tablespoon
Instructions
FOR PREPARING ALOO KI SABJI :
Wash and peel the potato. Cut it vertically into half. Then slice the potato into a thick stick shape.
Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida, dry red chilli powder, and potato. Mix well.
Add salt and turmeric powder. Mix well. Cover the pan with a lid and cook it for 8 to 9 minutes on medium flame. Keep stirring in between.
Once cooked well, add dry mango powder and coriander leaves. Mix well. - Once done, turn off the flame and take it out to a serving bowl.
FOR PREPARING MOONG DAL KI POORI :
Wash and soak moong dal overnight. Then strain the moong dal and transfer it to a grinding jar. Add salt and grind it for a few seconds to prepare its paste. Keep it aside.
Take whole wheat flour, carom seeds by rubbing between your palms, dry fenugreek leaves by rubbing between your palms, turmeric powder, red chilli powder, and salt. Mix well.
Add 1 tsp of oil and ground moong dal paste. Mix well. Add water gradually to prepare a medium-soft consistency dough. Add 1 tsp of oil and knead it well.
Take a small ball sized part of the dough and flatten it and roll it to make small poori. Likewise, prepare all the pooris.
Meanwhile, heat oil for frying. Put the prepared poori in the hot oil.
Deep fry it on a high flame for a few seconds until it turns crispy and golden brown from all sides. Then, take them out on a serving plate using a slotted spoon.
