Recipe :

MasterChef Style Tomato Soup
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
For the soup:
1 kg red tomatoes
1 carrot
1 onion
2 tbsp butter
2 tbsp oil
2 bay leaves
1 tsp pepper corns
1 bulb Garlic
3-4 basil leaves
Salt to taste
For the basil sauce:
½ cup basil leaves
2 -4 tbsp olive oil
4-5 walnuts
4-5 Toasted garlic
½ tsp salt
To serve:
Cherry tomatoes
Fried garlic
Cracked pepper
Bread croutons

Method:
Roughly chop the tomatoes, carrots and onions.
Heat 2 tbsp oil & 2 tbsp butter in a pan. add the bay leaves and the pepper corns. Add the carrots and onions and sauté over medium heat till the onion turn translucent and the carrots begin to caramelise.
Add the chopped tomatoes and mix well. Cover and simmer till the tomatoes are well cooked and pulpy.
Meanwhile cut the top of the garlic head. Drizzle 1 tsp oil over it. Wrap in cling wrap and microwave for 2 minutes. Unwrap and push out the roasted garlic cloves.
Also blend the basil leaves, walnuts, half the garlic and olive oil to make a coarse sauce.
Check the tomatoes if done. Remove from heat and cool completely. Blend to a fine puree. pass the soup through a sieve and discard any seeds or tomato skin left. Return the soup to the pan. add water as desired to adjust the consistency. Add salt to taste and bring to a boil.
Serve the soup in soup bowls. Garnish with basil sauce, olive oil, fried croutons and tossed cherry tomatoes.
