HARUMAKI is one of my family's favourite dishes! It's deep-fried spring rolls but you don't need a lot of oil, just shallow oil is ok.
You can make very crispy and tasty HARUMAKI, even better than the restaurants!

⭐️ingredients
150g minced pork
1/2 garlic chives
250g bean sprouts
3-4 dried shiitake
10g dried fungus
1/3 carrot
100g boiled bamboo shoot
50g Malony or vermicelli
10g ginger
1 clove garlic

⭐️seasoning
2 tbsp soy sauce
2 tbsp sake
2 tbsp mirin
2 tsp sesame oil
1 tsp oyster sauce
1 tsp chicken stock powder or dashi powder
200ml hot water (for dehydrating shiitake&fungus)
1 tbsp potato starch
2 tbsp water
salt
pepper

⭐️For wrapping
spring rolls wrapper
1 tbsp flour
2 tbsp water

⭐️basic dipping sauce
1tbsp soy sauce
1 tbsp vinegar
a few drops of la-yu (chilli oil)

👍You can buy HARUMAKI wrapper, fungus, Malony or vermicelli, boiled bamboo shoot in asian grocery shop.
👍For dipping sauce, Karashi (Japanese mustard) is also good!
