咸蛋奶油虾蛄 Butter Salted Egg Mantis Shrimp 味道浓郁 简单又好吃的做法

咸蛋奶油虾蛄
成份
~虾蛄-500g
~咖哩粉-5汤匙
~盐-1茶匙
~香炸粉-不要一次过调太多,不夠再加粉和水
~牛油-80g
~小辣椒-个人喜好
~咖哩叶-个人喜好
~咸蛋黄-6
~糖-3茶匙
~酱油-3茶匙
1)虾蛄洗净,用吸油纸将水分吸干
2)加入咖喱粉,增添香味,也可以去除鲜味,搅拌均匀后加入盐
3)香炸粉加入水,调成面糊
4)热锅加油,准备炸虾蛄,虾蛄粘面糊,放入热油中炸,炸至微黄,便可捞起,准备第二次油炸
5)第二次油炸,开大火,油温热后,加入炸好第一次的虾蛄,第二次油炸可使更酥脆,也可以逼出多余的油
6)蒸咸鸭蛋黄,15分钟,用汤匙将蛋黄压碎
7)拍打小辣椒
8)咖哩叶洗净去梗
9)热锅加入牛油+小辣椒+咖哩叶+咸蛋黄,炒至蛋黄,开始起泡沫,在加入炸好的虾蛄,翻炒均匀+糖+酱油,再翻炒均匀后,可以上锅,完成

Ingredients
~Mantis shrimp -500g
~Curry powder-5 tablespoons
~Salt-1 teaspoon
~Fried powder- don’t mix too much at once, add powder and water if not enough
~Butter-80g
~Chili padi -personal preference
~Curry leaves-personal preference
~Salted egg yolk-6
~Sugar-3 teaspoons
~Soy sauce-3 teaspoons
1) Wash the mantis shrimp and absorb the water with kitchen towel
2) Add curry powder for fragrance and remove the umami taste, than add salt after stirring evenly
3) Add water to fried powder to make a batter
4) Add oil to the hot pan, prepare fried mantis, mantis sticky batter, put it in hot oil and fry it until slightly brown, then pick up and prepare for the second deep frying
5) For the second deep frying, turn on high heat. After the oil is warm, add the first fried mantis, let second deep frying, it can make it more crispy
6) Steam salted egg yolk, 15 minutes, mashed the egg yolk with a spoon
7) Smash the chili
8) Wash the curry leaves and remove the stems
9) Add butter + chili + curry leaves + salted egg yolk in the hot pan, fry until the egg yolk, start to foam, add the fried mantis, stir evenly + sugar + soy sauce, stir evenly again, done
