Ingredients for 5-6 servings:

For Preparation of Koftas

Boneless Mutton – 1 Kg
Ginger Garlic Paste – 1 Tablespoons
Red Chilli Powder – 3 Teaspoons
Turmeric Powder – 1 Teaspoons
Salt – 1 ½ Teaspoon
Spices – 1 Teaspoon
Mint Leaves – 1 Bunch (Medium size)
Chopped Coriander – 1 Bunch (Medium Size)
Cooking Oil for Frying

Procedure :

In an empty bowl, add boneless mutton, ginger garlic paste, red chilli powder, salt, turmeric powder, spices, mint leaves and chopped coriander. Grind this mixture into a paste. Divide them into portions and mold them into medium sized round balls or koftas. In a frying pan, add oil for frying and when the oil is hot, add these koftas and fry till golden brown.

Ingredients for Preparation of Gravy or Aqni:

Cooking Oil – 5 Tablespoons
Ginger Garlic Paste – 2 Tablespoons
Cinnamon (Small sticks) – 2
Cloves – 3
Caraway Seeds (Shahzeera) – 1 Teaspoon
Turmeric Powder – 1 Teaspoon
Big Chopped Tomatoes – 4
Red Chilli Powder – 4 Teaspoons
Whipped Curd – 3 Cups
Mint Leaves – ½ Bunch
Chopped Coriander – ½ Bunch
Whole Green Chilles – 3
Spices (Garam Masala) – 1 Teaspoon
Chopped Onions Fried – 4

In a separate saucepan, cooking oil, ginger garlic paste, cinnamon, cloves, caraway seeds, turmeric powder, chopped tomatoes, close the lid and cook for 5 minutes. Mix well and add salt, red chilli powder, stir well and add whipped curd, mint leaves, chopped coriander, whole green chillies and close the lid. Let it cook for 5 minutes. Add fried koftas and let it cook for 5 minutes. Switch off the flame and add spices and chopped onions fried to crispy.

Ingredients for Preparation of Rice:
:
Water – 4 Litres
Rice – 1 Kg
Salt – 4 Teaspoons
Caraway Seeds – 1 Teaspoon
Cloves – 3
Cinnamon (Small Sticks) – 3
Mint Leaves – ½ Bunch
Chopped Coriander – ½ Bunch
Green Chillies – 3-4

In a separate cooking saucepan, add water, salt, caraway seeds, cloves, cinnamon, mint leaves, chopped coriander, whole green chillies and close the lid. Let the water comes to boil. Add 1 kg of washed rice. Semi cook the rice and drain the water.

Ingredients for Preparation of Mutton Kofta Biryani:

Semi Cooked Rice – 1 Kg
Gravy or Kofta Aqni
Chopped Coriander – Handful
Mint Leaves – Handful
Milk – ½ Cup
Saffron Strands – 10-12
Pure Ghee – 2 Teaspoons
Fried Onions – Handful
Juice of 1 Lemon
Dough for sealing the lid

Take out half of the rice in a bowl. On the remaining half, spread the gravy with koftas or kofta aqni. Spread the rice on the gravy which we kept aside in a bowl. add chopped coriander, mint leaves, milk with few strands of saffron soaked in it, add pure ghee, fried crispy onions, juice of lemon. Fix the lid using dough to retain the steam. Cook on medium flame for 10 minutes and keep changing the position of the saucepan so that the heat spreads evenly.When the steam develops, simmer for 15 minutes.

The delicious kofta biryani is ready. Serve with Dahi Ka Raita.
