Ingredients & Recipe:

In a bowl add 2 litres of water and 1 kg Yogurt. Mix this well and create lassi of it. Now add 220 grams of gram flour (Besan) and mix it well. This besan mixture is ready!

Now in a cooking pan add 200 grams ghee and when it gets hot enough add 2 sticks cinnamon, 5-6 cloves and 3 bay leafs. Now add 2 medium onions sliced and cook them until they turn light brown. Now add 2 tablespoon ginger / garlic paste, 1 cup tomato puree, 2 TBSP Red Chili Powder, 1 TBSP coriander powder, 1 TBSP Turmeric powder, 1-1/2 TBSP Salt and 1 Teaspoon Kashmiri red chilli powder. Cook this well and then add the besan mixture we made earlier.

Now cook this until it starts to get thickened. Once it turns thick add 2 Litres of more water into it and let it cook in low flame for 45-60 Minutes.

Pakora Mixture:

500 grams Besan
2 TBSP Coriander seeds crushed
1-1/2 TBPS Anaar Daana
5-6 Chopped green chilies
1-1/2 TBSP Red chilli powder
1 TSP Chili flakes
1 TSP Zeera
1 TSP Fenugreek (Maythi)
2 Medium onions sliced
4-5 Spring onions chopped
150-200 grams Spinach
2 Medium Potatoes thinly cut
1/2 Cup freshly chopped coriander
1 TSP Garam masala

Mix this well and combine some water with it. Make a thick paste of it. Then add 2-3 TBSP hot oil into this mixture and 1 TSP Meetha soda and add some lemon on meetha soda. Mix this well and pakora mixture is ready to be fried.

Make pakoras in batches and transfer into kadhi when 40 it has been cookking for 40 minutes.

After all the Pakoras are shifted in Kadhi, then we will add tarka on it

Tarka:

5 TBSP Ghee
1 Teaspoon zeera
8-10 curry leaves
5-6 whole red chillies

When ghee is hot, add all these ingredients and cook just for 30 seconds and add that tarka on kadhi.

Your Kadhi is ready to be served. Enjoy!
