INGREDIENTS:
Milk (दूध) - 1 litre
Water (पानी) - 1/2 cup
Vinegar (सिरका) - 2 tsp
Sugar (चीनी) - 1 bowl
Water (पानी) - 6 bowls
Cornflour (कॉर्नफ्लोर/अरारोट) - 1 tsp

FOR RABRI:
Milk (दूध) - 1/2 liter
Sugar (चीनी) - 4 tbsp
Saffron (केसर) - some
Dry fruits (सूखे मेवे) - some

RECIPE:

For Rabri, boil some Milk on the flame. Put some Sugar in it and boil it till it turns thick. Then keep it for cooling down in the fridge. Soak some Saffron in some Milk and add Saffron Milk in the thick Milk.
For Chhena, take some raw and low-fat Milk and boil it. Then turn off the flame and continuously stir it for 5 mins. Take some water in a cup, mix some Vinegar in it and add it in the boiled Milk gradually to curdle it.
Take a big bowl, place a strainer in it, and keep a Cotton Cloth on it. Then put the curdled Milk in it and wash it properly. Then squeeze it and tie it and keep it for 30-35 mins. Then mash the Chhena and knead it with palm and add some Corn flour in it and again knead it continuously for 5-6 mins. Then make small flat balls of Chhena.
Keep a pan on flame, put some Sugar and Water and keep it for boiling. Put the flat Chhena Balls/Rasmalai Balls in the boiling water and boil it for 20 mins on high flame.
Then put the Rasmalai Balls in the Ice Cold Water for some time.
Take out the Rasmalai balls on a serving plate, put the thick Milk on it, and garnish it with some Saffron and chopped Pistachios.
In this way, Tasty and Spongy Bengali Sweet Rasmalai will get ready so perfectly at home.
