This is an easy and homely recipe showing you how to make this tender melt in your mouth braised pork belly dish called tau yu bak (or tau yew bak). The literal translation is soy sauce pork. It's another easy and delicious way to enjoy the best of pork belly, which in this case is braised to perfection until it is not only so tender it is on the edge of falling apart but it has also absorbed all the delicious flavours and seasonings added to the braising liquid. Also added for enjoyment are fried tofu pieces and hard boiled eggs, this chinese dish is usually served with steamed rice.

The full recipe is below

600g pork belly
20g ginger, sliced
2 spring onion white, sliced 5cm
6 cloves garlic, squashed
4 dried chilli
1 tsp szechuan peppercorn
2 bay leaves
1 cinnamon stick
1 star anise
3 tbs chinese cooking wine
3 tbs soy sauce
1 tsp black vinegar
2 tsp dark soy sauce
Boiling water (enough to cover pork belly)
50g rock sugar
1 tsp five spice powder
130g fried tofu
2 hard boiled eggs
Vegetable oil

Boil pork belly in water for 10 mins to remove impurities.
Remove from water and set aside.

Fry ginger, spring onion white, and garlic in vegetable oil on medium heat for 2-3 mins.
Add dried chilli and szechuan peppercorns and stir fry for another 45 secs.
Add bay leaves, cinnamon, and star anise and fry for another 1 min.
Add boiled pork belly skin side down.
Add chinese cooking wine, soy sauce, black vinegar, dark soy sauce, boiling water, rock sugar, and five spice powder.
Mix well and bring to the boil.
Add tofu and hard boiled eggs, reduce to low heat, and cooked covered for 1 hr.
Turn pork belly every 15 mins.
After 1 hr, remove tofu and hard boiled eggs along with some of the sauce.
Continue cooking the pork belly covered for 30 mins.
After 30 mins, remove all solid ingredients such as cinnamon stick, bay leaves, and garlic from the sauce.
Continue cooking uncovered for another 30 mins to allow the sauce to thicken.
Remove pork belly from the sauce and allow to rest for 10-12 mins before slicing.

Assemble serving bowl with tofu, egg, and slice pork belly along with both the thin and thick sauces made during the cooking process.
Garnish with spring onion and serve.
