This recipe is packed with tender chicken thighs, golden potatoes, and colorful vegetables, all cooked together in a rich and flavorful tomato sauce. Ingredients:

5 chicken thighs (bone-in or boneless)
5 medium potatoes, peeled and cut into chunks
2 medium onions, sliced
2 bell peppers, sliced (any color you like)

4 cloves of garlic, minced
2 teaspoons paprika powder
1 ½ teaspoons salt (adjust to taste)
1 teaspoon garlic powder
1 teaspoon turmeric
390g packet of tomato sauce (about 1 ½ cups)
2-3 tablespoons olive oil (for cooking)
Freshly ground black pepper (to taste)
Fresh herbs for garnish (optional – parsley or cilantro)
Instructions:

Prepare the Chicken:

Pat dry your chicken thighs and season them with 1 teaspoon paprika, ½ teaspoon salt, 1 teaspoon garlic powder, and 1 teaspoon turmeric. Massage the spices evenly into the chicken thighs.
Sear the Chicken:

In a large deep pan, heat 2 tablespoons of olive oil over medium-high heat.
Once the oil is hot, sear the chicken thighs skin-side down for 4-5 minutes until golden brown. Flip and sear the other side for another 4-5 minutes. Remove and set aside.
Sauté the Vegetables:

In the same pan, add a little more olive oil if needed and sauté the minced garlic until fragrant (about 30 seconds).
Add the sliced onions, bell peppers, carrots, and potatoes. Stir and cook for 5-6 minutes until they begin to soften.
Sprinkle in the remaining 1 teaspoon paprika and 1 teaspoon salt. Stir to combine.
Add Tomato Sauce:

Pour in the tomato sauce and stir to coat the vegetables. If the sauce feels too thick, add a splash of water to loosen it up a bit.
Simmer Together:

Place the seared chicken thighs back into the pan, nestled on top of the vegetables.
Cover the pan with a lid, reduce the heat to medium-low, and let it simmer for about 30-35 minutes. Stir occasionally to ensure even cooking. The chicken should be fully cooked (internal temperature of 75°C/165°F) and the potatoes tender.
Serve:

Once everything is cooked to perfection, give it a taste and adjust seasoning if needed.
Garnish with fresh herbs like parsley or cilantro for an extra burst of flavor!
