🍋 Lemon Cake Ingredients:
2 1/4 cups all-purpose flour
2 1/4 tsp baking powder
3/4 tsp salt
3/4 cup unsalted butter room temperature
1 1/2 cup granulated sugar
Zest of 1 lemon
3 large eggs room temperature
1 1/2 tsp vanilla extract
1 cup whole milk, room temperature
1 Tbsp Lemon juice
🍓 Strawberry Frosting Ingredients:
Puree of 6 strawberries (optional: strain to remove seeds)
1/2 Cup room temperature butter
1/2 of the puree
3-4 Cups Powdered Sugar
1/2 tsp vanilla
1 tbsp heavy cream
1 tbsp lemon juice
Whipped Cream:
Approx. 2 oz heavy cream
1-2 tbsp strawberry puree
🍋 Lemon Cake Instructions:
1. Preheat the oven to 350 degrees, and line 2 - 9" round baking pans with parchment
2. In a medium bowl, mix the dry ingredients
3. In a mixer with the paddle attachment, add the butter, sugar, and zest. Mix for about 3 minutes, until well combined and butter has turned a lighter shade and somewhat fluffy
4. Beat in the eggs, one at a time
5. Add vanilla and lemon juice, mix to combine
6. Alternate adding flour and milk (or buttermilk) just until combined.
7. Pour evenly into both baking pans. Bake for 30-35 minutes.
8. Cool for about 10 minutes before flipping onto wire rack. Remove parchment.
🍓 Strawberry Frosting Instructions:
1. Add butter to mixer with the paddle attachment, whip on medium until it begins to look soft
2. Add half of the strawberry puree (okay to eyeball this!). Whip again until it begins to combine
3. Add the sugar, one cup at a time until well-combined
4. Add vanilla, heavy cream and lemon juice, whip until well-mixed. If your buttercream does not seem thick enough, continue adding sugar, 1/4 cup at a time, until it has a soft peak consistency.
5. Refrigerate at least 10 minutes before using to let the frosting set up a little
Whipped Cream:
1. With the whisk attachment, add the heavy cream and about 1-2 tbsp of the puree to the mixing bowl (no need to wash after making the frosting)
2. Whip on medium-high speed until thick, and stiff peaks form.
Assemble the cake with the bottom layer, then any remaining puree. Add you whipped cream in the middle before topping with the second cake. Decorate as you like! I opted for chocolate covered and raw strawberries on mine, with some shaved dark chocolate, but feel free to have fun and get creative with it!
