The 2nd of the two part mutton liver series which started last Friday with mutton liver in black pepper. This dish is simple to make, yet delicious. The difference being that oil/ghee is added after the liver is almost cooked through, in water.
Lightly spiced, this mutton liver curry, will go very well with hot rotis or parathas.

Ingredients

1) Mutton liver -500 grams
2) 2 medium sized onions, chopped.
3) Ripe tomatoes, quartered- 3
4) Green chillies - 4
5) Garlic paste - 1.5 tbsp
6) Turmeric powder - 1 tsp
7) Red Chilli powder - 1 tsp
8) Cumin powder - 1 tsp
9) Garam masala powder - 1 tsp
10) Ghee - 1/4 cup
11) Salt - 1 tbsp
12) Water- 4 cups


Method

Put mutton liver in a pan along with 4 cups of water and bring water to a gentle simmer.

Add chopped onions, garlic paste, slit green chillies, turmeric powder, red chilli powder and salt.

After giving everything a good mix, cover and cook for 15-20 minutes on medium to low heat.

The water will reduce to half and the liver will be 50% cooked.

Add the tomatoes at this point and cover and cook till the tomatoes soften and form a gravy. The water will reduce almost 90% by now.

At this point add ghee and fry the liver in the ghee on medium to high heat, till the ghee separates.

Finish with cumin and garam masala powder, for aroma.
