Preparation time: 30 minutes + overnight
Cooking time: 45 minutes
Servings: 2-5 pax

Ingredients:
5 potatoes (boiled first, remove the skin)
A little water
Salt as needed

Stir-fry ingredients:
A little oil
A little cumin seed
A little fennel seed
A little urad dhal
1 star anise
A little cinnamon stick

Sliced ingredients:
1 onion
1 tomato (remove seeds)
3 green chilies
3 nos garlic

Spices ingredients:
1 tsp turmeric powder
1 tsp chili powder
1 tsp garlic powder

Other ingredients:
Sliced coriander leaves
Sliced curry leaves

Tosai ingredients:
4 cups rice
2 cups urad dhal
1 tsp fenugreek
A little dhal beans
*soak with water overnight.

Cooking method:
1. Prepare a pan, saute all the stir-fry ingredients and sliced ingredients. Stir until fragrant. Then add the boiled potatoes and mash a little.
2. Then, add all spices, a little water, sugar and enough salt. Stir well.
3. Adjust the taste and finally add coriander leaves and curry leaves. Stir well and ready to serve.
4. For tosai, finely grind all the ingredients that have been soaked overnight. Then, leave it for a while at room temperature for 1-2 hours. Then. Prepare a flat pan, apply a little oil and pour the mixture and make circles like making pancakes. Place the potato as a filling and fold it neatly. Ready to be served.
