BAN MIAN or FLAT NOODLE SOUP is a culinary dish that is popular in Hakka speaking areas- China, Malaysia, Singapore, and Taiwan. The name "Banmian" derived from the Hakka method of cutting the noodle using a wooden block as ruler. The base stock is so flavorful, on this recipe we used anchovy stock and chicken broth cube which gives more flavor on our dish. This dish is one of my comfort food when I stayed in Singapore. So when I shifted to another country, I did my research on how to make a bowl of this healthy dish and I came up with my modified recipe. And yes, homemade is always the best!

INGREDIENTS:

For the Meatballs:
1/4kg Minced Pork
1tbsp. Soy Sauce
1tbsp. Sesame Oil
1 1/2tbsp. Cornstarch
Salt and Ground Blackpepper to taste

For the Soup:
100g Dried Anchovies
2pcs Chicken Cube
1thumbsize Ginger, minced
1.2L Water (Add more if needed)
1tsp. Salt
1tsp. Ground Blackpepper
400g Homemade Egg Noodle
Bokchoy
4 Eggs

Serve with:
100g Crispy Fried Anchovies
Chopped Scallions
