 Recipe:
Black Forest cake Chocolate Cake Recipe
Dry Ingredients:
280g all-purpose flour
250g sugar
100g cocoa powder
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Wet Ingredients:
250ml milk
2 large eggs
120ml canola oil
200ml brewed coffee

Whipping cream:
250ml whipping cream
2–3 tbsp cream cheese (for 250ml of whipping cream, you can add 2 to 3 tablespoons of cream cheese for a richer texture and slight tanginess)
2 tbsp sugar
2 tsp lemon juice (or you can use vinegar)

Cherry Jam:
1 cup cherries (pitted)
1/2 cup sugar
2–3 tbsp lemon juice
Instructions for Jam:Mix all ingredients in a saucepan. Cook over low heat until it thickens into a jam consistency. Let it cool, then store in the refrigerator.

For Topping and Decoration:
Melted chocolate (for topping)
Chopped chocolate (for side coating)
Fresh cherries (for topping)

Whipping Cream Filling (Simple Method):
1. In a mixing bowl, add 250ml whipping cream and 2 tsp lemon juice (or vinegar).
2. Whip the cream until it begins to get very frothy.
3. Add in the 2–3 tbsp cream cheese and 2 tbsp sugar (make sure the cream cheese is soft and sugar is cooled or at room temperature if previously heated).
4. Continue beating until soft peaks form – the cream should hold its shape but still look smooth and creamy.Do not overmix, as it can cause the cream to split or become grainy.
5. Chill the whipped cream in the refrigerator until ready to use.


Method:
1. Preheat your oven to 170°C.
2. In a large bowl, whisk together all the dry ingredients.
3. In a separate bowl, combine the wet ingredients.
4. Add the dry mixture to the wet mixture and stir just until combined.Do not overmix: Overmixing can develop the gluten in the flour, making the cake dense and tough instead of soft and fluffy.
5. Pour the batter into a lined or greased 2 x 8 inch cake tin.
6. Bake at 170°C for about 25 minutes, or until a cake tester or toothpick inserted in the center comes out clean.
7. Let the cake cool to room temperature before assembling or decorating.
