♣ Oven
* Preheat 250℃ / 500℉ 👉 Bake in 230℃ / 450℉ for 15~20 mins

♣The container size I used in the video - 21*13*7cm square food container
- You can use any similar food container

♣ Ingredients
** 1cup(250ml) & 1Tbsp(15ml) ** I wrote measuring cup measurement as a service, but I use and recommend ‘g’ measurement. *
▷potato 120g (about medium size 1ea)
▷water 220g (220ml) *have to adjust how much water you need(must follow video)
▷instant dry yeast 3g (3/4tsp)
▷sugar 10g (1Tbsp)
▷salt 6g (1+1/4tsp)
▷olive oil 15g (1Tbsp)
▷bread flour 250g (1+2/3cups)
▷option) cheddar cheese 40g(1/2cup)

▷salt little bit
▷option) herb (oregano, basil, thyme, rosemary)


💡 Q : My kitchen is so hot. Is it okay to proof bread?
A : Use very cold water to decrease temperature of dough.


💡 Q: Can I do it with the overnight method?
A: Yes.
The characteristics of overnight potato bread 👉 Because the dough is cold, the pores are smaller and the volume is smaller than that of the same day version, but the flavor is better.
:: Process ::
1. Proceed in the same way until 02:35, and place it in the fridge(5℃). Based on my experience, 10~15 hours is OK.
2. Take it out the next day and do the east-west, north-south folds at 02:47. Not once, but *2 times*. (At 02:47 in the video, only one fold of east, west, north and south ends. But at this time, please do it twice. Because the dough has loosened overnight, it is to give strength to the dough. If you do**, that is, 4 folds X 2 times = 8 overlapping times**, you will feel the dough turns elastic.
3. When done, place the dough on a Teflon sheet (or paper foil) coated with olive oil, turn it over so that both sides can be coated with olive oil, cover with cling wrap and wait for 30 minutes. (See 03:50~04:11) / * When your place is cool, wait for 45 minutes *
4. As in 04:12, stretch it out little by little by hand to shape it, cover it again with cling wrap, let it ferment for 30 minutes, and bake in the same way.


💜 How to keep it
* Put it in a food container and store it at room temperature. It is delicious to eat within 2 days. Or, when the bread is fresh, it is frozen and then naturally defrosts and have it.
* If you already sliced bread, you can toast sliced frozen bread in a toaster directly. (Easy + Good!)
