Bột làm bánh mì này là loại ngang đa dụng, đạm không cao, không cần nhồi, xài ít men, làm ra bánh vỏ mỏng giòn, ruột xốp. Chẳng cần bí quyết gì, xem clip này các bạn sẽ thấy để có những ổ bánh mì tung cánh thơm ngon, thật chẳng có gì là khó khăn hết.
Nguyên Liệu - Ingredients:
700g All purpose flour (10% protein) / bột mì đa dụng 10% đạm trở lên
2tsp sea salt / muối biển
430g water / nước
1 tsp instant dry yeast = 3g / men nổi
1 egg 60g (with shell) - trứng gà
1tsp butter to coat (optional)/ bơ quét vỏ bánh
Direction notes:
1/ Mix flour, salt, yeast, water, egg in 3qt IP inner pot. Mix until combine and smooth.
2/ Let the dough rise in instant pot, Yogurt, Less. Temperature range (86-93°F), 30-34°C for 2 hrs, or longer at room temperature
4/ Transfer dough to lightly floured surface.
Divide the dough into 5 portions, pre-shape each into a disc by stretching the top of the dough to the bottom on all sides.
Cover and Rest 20' on the counter
5/ Shape each into a loaf, seam side up
6/Place them on perforated pan, seam side down. Cover and rest in warm place for 2 hours
or until the loaves are almost double in size (about 80-90%).
Pour 2 cups of water into the trays at the bottom of the oven
Placed pizza stone (optional) on the middle rack position
* warm place, or oven: turn on 30 seconds at lowest temp 100F/38C
7/Meanwhile, preheat the oven to 450°F / 232C
8/ When the oven's heat reaches to 400°F, score the loaves, spritz water
9/ Place the baking pan to oven. Spritz. Bake 8' at 450°F/ 232C, spritz
10/ Bake 17' or until golden
11/ Transfer loaves to a wire cooling rack
