Lalisa (Lisa) from Blackpink KPOP group stated in an interview that she loves the meatballs from Buriram's Yeun Kin (Stand & Eat) food stand because of their unmatched chili sauce that it's dunked in. I show you my take on how to make this addicting sauce. It's spicy, tangy, sweet, savory and hugs the meatballs very well. Super difficult to stop at just one skewer because of how delicious the sauce is!

Since the interview, many people have made their way to Buriram to try the sauce at this food stand. Now, you can make it at home!

INGREDIENTS

Chili Sauce for Meatballs
Tamarind Liquid (Tamarind Pulp - 2.5 tbsp + Hot Water - 2 cups)
Dried Guajillo Chili - 1 chili
Dried Spicy Red Chili - 1 heaping handful or about 45 chilis (I used Jinda Chilis)
Garlic - 16 cloves
Shallots - 7 small bulbs (chopped)
Palm Sugar - 1 cup (shaved, packed - roughly 80 g)
Shrimp Paste - 1 tsp
Salt - 1/2 tsp
MSG - 1 tsp
Fish Sauce - 1.5 tbsp
White Pepper Powder - 1/4 tsp
Shallot Oil - 2 tbsp
Crispy Fried Shallots - (3 small shallots sliced thinly + Vegetable Oil - 1/3 cup) - this will create shallot oil that is needed for this recipe
Corn Starch Slurry (Corn Starch - 1 tbsp + Water - 2 tbsp) - (in the video, I said to use 1.5 tbsp but 1 tbsp is enough)
