This vegan carrot cake with caramel frosting wasn't the birthday cake I'd planned on making for myself, but buying too many carrots turned into a very happy (and delicious) accident! The cake is moist and tender with lots of beautiful spices, and the salted caramel frosting adds a little touch of luxury and complexity

Carrot Cake Ingredients:
Ermine Frosting;
200g (1 cup/7oz) Golden Caster Sugar (superfine sugar)
45g (3 tbl) Flour (I used cake flour)
230ml (1 cup less 1 tsp/8oz) Plant Milk (I used Oat)
230g (1 cup/8oz) Vegan Butter
1 tsp Vanilla Extract

Vegan Carrot Cake;
200g (1 cup + 2 tbl/7oz) Dark Brown Soft Sugar
100g (½ cup/3.5oz) Light Brown Soft Sugar
180ml (¾ cup/5.75oz) Sunflower Oil
180ml (¾ cup/6.25oz) Plant Milk
Zest of 1 Lemon
1 tbl Lemon Juice
2 tsp Vanilla Extract
230g (2 cup less 1 tbl/8oz) Plain Flour
100g (¾ cup + 2 tbl/3.5oz) Wholemeal Flour (I used bread flour)
2 tsp Baking Powder
1 tsp Baking Soda
3 tsp Mixed Spices (see Sweet Treats link)
1 tsp Cinnamon
¼ tsp Coriander Seeds
4 pods Black Cardamom
¼ tsp Salt
360g (12.5oz) Grated Carrots
2 tbl Cake Flour

Caramel Sauce:
100g (½ cup/3.5oz) Golden Caster Sugar
30g (2 tbl/1oz) Vegan Butter
60g (¼ cup/2oz) Vanilla Soy Yoghurt
½ tsp Salt

50g (1.76oz) Chopped Toasted Hazelnuts to decorate

My channel is you watching the results of my 2am thoughts of “I wonder what would happen if I put A with B?” The answers lean heavily towards cake, and my ongoing quest to find a good meat substitute. I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
