Day 2 - Oat Bake
1 banana
1 cup oats
1/4 cup pumpkin seeds
1/4 cup seed mix ( flax, chia, hemp, sesame, sunflower )
1/3 cup almonds ( chopped )
2/3 cup oat milk
1 tsp cinnamon
1 cup frozen blueberries ( 2/3 on in the mix + 1/3 on top )
coconut oil for baking dish
( feel free to add 1-2 scoops of protein powder, I recommend vanilla. but you will need to add a touch more milk 2-3 tbsp )

- Mix everything in a large bowl ( mashing the banana first ).
- Bake @ 175c or 350f for 20- 25 minutes
- allow to cool for 20 min before serving and store in the fridge afterwards


Day 2 Antioxidant rich salad
red cabbage
red bell pepper
red onion
green mix of choose ( sub for straight kale or spinach )
1 carrot ( chopped small or julienne )
1 tbsp pickled ginger ( sub for 1/2 tbsp fresh ginger grated )
1/2 large cooked beet
2 tbsp vegan mayo ( sub for plain hummus )
1/2 lemons juice
sea salt to taste
black pepper to taste
1/4 tsp garlic powder
chilli to taste

Day 3
Sauce for pasta:
1 oranges juice
1 tbsp sugar
2 tbsp tahini
1 tbsp soya sauce
4 cloves garlic
3 tbsp pickled ginger ( sub 2 tbsp fresh grated )
chilli to taste

- for pasta -
any veggies you choose!
1 can of chickpeas
I do recommend adding 1/4 a can of corn

Day 4
beet and orange salad:
red cabbage
green mix
1 small beet
1 orange
1/2 cup sauerkraut
1 avocado
- sauce:
2 tbsp tahini
3 tbsp apple cider vinegar ( sub for 1/2 lemons juice )
salt to taste
1/2 tbsp sugar
1/2 tsp garlic powder
chilli to taste
splash of water ( if needed! )
