This khaman dhokla turns out turns out soft and spongy. This is a no fail recipe. This dhokla is made from rava and besan. So far we have seen different dhokla recipes. This is yet another simple and delicious addition to the list. Dhokla is a popular Gujarati recipe. You can have it for breakfast or evening snack or as side dish in meal. The perfect dhokla is light, spongy and fluffy. If you follow this recipe you will be able to make perfect dhokla. You can make it from very few ingredients those are readily available I your pantry. It doesn’t need lot many ingredients. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 1 cup Besan
• 1 cup fine Rava / Suji
• 1/2 tsp Turmeric powder
• Salt to taste
• 1/2 cup Curd
• 1 1/2 cup Water
• 1 tsp Fruit salt
• 1/2 cup Water
• 1 tbsp Sugar
• 1 tbsp Oil
• 1/2 tsp Mustard seeds
• A pinch of Hing
• 3 slit Green chilies
• Finely chopped Coriander leaves

Method:
• Mix besan, rava, turmeric powder, salt well in a bowl and add curd. Mix well.
• Avoid using coarse rava.
• You can use 1 cup buttermilk in place of curd.
• Add water and mix well.
• The quantity of water will depend upon the consistency of curd.
• Cover and rest the batter for about 10 minutes.
• Add fruit salt and mix in quickly.
• You can add 1/2 tsp baking soda or 1 tsp baking powder in place of fruit salt.
• Or you can ferment the batter overnight and make dhokla next morning.
• Line up a tray with wax paper and pour the batter in it.
• Steam the dhokla on medium heat for 12-15 minutes.
• Mix water and sugar well until sugar is dissolved.
• Check the dhokla with a toothpick. If it comes out clean it means the dhokla is steamed well.
• When the dhokla is cooled down completely cut it into pieces and loosen the edges.
• Pour the sugar syrup on the dhokla when it still is in the tray.
• For tadka heat up oil in a tadka pan and add mustard seeds.
• When mustard seeds pop up add hing, green chilies and mix well.
• Add this tadka on the dhokla and garnish with coriander leaves.
• Take the dhokla out of the tray and serve.
