"Kohaku-to (琥珀糖)" is a Japanese semi-dry confection. "Kohaku" means amber and "tō" means "sugar" in Japanese and it is also represented as "edible jewel".
Kohakuto is a kanten (agar) jelly with crystalized crunchy skin. It goes well not only with green tea or matcha, but also with coffee or any type of tea.

■Ingredients■ (18cm ×18cm)
3.0g agar powder
200g sugar
130g water
* Boil down to 290g

food coloring
liqueur/syrup

[Icing]
20g icing sugar
1g egg white powder
water
