Savoury Onion, Leek and Potato Pie

In a deep skillet add 2 Tbsp Oil, 1 Tsp Garlic, 1 Onion Sliced, 2 Leeks Sliced. Season with salt and pepper. Saute until just tender.
Add 1/4 C Vegetable stock and cook off moisture until mixture is quite dry.

Place the mixture in a bowl and refrigerate overnight if possible.

Take 1 square of Puff Pastry and turn up the edges by 1/2 Inch and crimp with a fork. Place thinly sliced potatoes in the bottom and then layer the Onion and Leek mixture. Do not overfill!

If you need to chill the dough place back in the fridge for 20 minutes.

Sprinkle the top with some Parmesan Cheese.

Bake according to the directions for the pastry.

Serve warm or cold with a crisp green salad. An absolicious Summer lunch or light dinner.
