MERLE'S MUDSLIDE SMOOTHIE
1 cup plant-based milk
1/2 cup rolled oats
1 frozen banana
2 scoops Garden Of Life Chocolate Protein Powder
2 tbsp peanut butter
1 pinch cinnamon
1 pinch salt


Protein Breakdown
Garden of life protein powder - 30g
1 cup oat or soy milk - 3-9g protein
½ cup oats - 4g protein
2 tbsp peanut butter -7g
44g-50g

BEAN SALAD LETTUCE WRAPS (3 servings)

1 15-ounce can white beans, drained and rinsed
1 15 oz can kidney beans. Drained and rinsed
1 cup finely chopped roasted red peppers OR pico de gallo
1/3 cup finely chopped fresh parsley /rip it with your hands
1 cup marinated artichoke hearts
2 tablespoons lemon juice, about 1 lemon
2 tablespoons extra virgin olive oil
1/2 teaspoon garlic powder
2 tbsp nutritional yeast
½ tbsp dijon mustard
1 avocado
salt & pepper, to taste
1 head romaine or butter lettuce, for serving

Protein Breakdown:
White beans - 24.5
Kidney beans - 24.5
Nutritional yeast - 5g

Total: 54g 1 serving - 20g

VEGAN CREAMY SUNDRIED TOMATO PASTA
Ingredients:
1 can/jar of butter beans (500g) I used @boldbeanco as always
1/2 cup sun dried tomatoes
2 cloves garlic
1/2 cup nutritional yeast
Juice of 1 lemon
1/2 tsp chilli flakes
1 tbsp tomato paste



Protein Breakdown:
White beans - 24.5g
Nutritional yeast - 20g
1 ½ cups pasta - 12g

Total: 56.5 1 serving: 28.25
