Ingredients:

1 kg chicken, cut into pieces
1 medium onion, finely sliced
1 tbsp sriracha
3-4 garlic cloves, crushed
3 tbsp fish sauce
2 tbsp lemon grass
1 tsp turmeric
2 tsp molasses
1/2 lime juiced

Cut chicken along the grain into 1/4" thick slices. Combine finely chopped garlic, lemongrass, turmeric, and fish sauce, and use it to marinate chicken for at least one hour.

Heat oil or duck fat in a wok or a large pan. Stir fry the chicken pieces in batches until they begin to caramelize. When the last batch is done add the onions and all the previous batches, mix well, and cook until the onions soften, add the lemon grass and lime juice and continue cooking. Add the molasses, mix well, and turn off the heat.

Serve with jasmine rice.
