Mine Renverse is a simple stir fry meat and vegetables served with noodles and fried egg.

Serves 5 - 6
Ingredients:
For marinating:
500g Lamb (Sliced)
1 TBSP Cornstarch
1 TBSP Light Soy Sauce
1 TBSP Oil
1 Egg White
Pepper

For the sauce:
500 ML Water (Note 1)
5 TBSP Oyster Sauce
2 TSP Dark Mushroom Soy Sauce (Optional)
1 Chicken Cube

For the rest of the ingredients:
Stir Fry
2 Garlic Cloves
1/2 inch Ginger
80g Bamboo Shoots
80 g Babycorn
150 g Baby Bok Choy
5 - 6 Dry Shiitake Mushroom (Note 2)
1 Medium Carrot (60 g)
1 Small Onion

2 TBSP White Vinegar or rice Vinegar or Cooking Wine (Note 3)
1 TSP Sesame Oil
2 TSP Sugar
1 TBSP Cornstarch + 1 TBSP Water (Note 4)
Spring Onion (Chopped)
Pepper
Pinch of Ajinomoto (Optional)

Boiling the Noodles
In a large pot add water, then 2 TBSP Fish sauce or 1 TBSP Salt and some chopped green onion. Bring to a boil, then as per serving add the noodles then let sit for 30 seconds. Drain.

Depending on serving
5 -6 Eggs

Note:
1. Add more water if needed while boiling the shiitake mushroom.
2. Another alternative to rehydrate shiitake mushrooms?
Gently rinse the dried shiitake mushroom with cold water.
Place the dried mushrooms in a bowl with warm water and cover.
Soak the Chinese dried mushrooms in warm water until softened (Overnight). Use shiitake mushroom to flavour the water.
3. White vinegar is an alternative if you are not using Cooking Wine.
4. More cornstarch can be use depending on the thickness of the sauce.
5. We add white egg, cornstarch and oil to the meat as it will help the meat to stay tender.
