RECIPE:
Tennis Rolls
Prep time 20 minutes
Cook time 25 to 30 Minutes
First proofing time 30 minutes
Second proofing time 30 minutes
Total Time 1hr 45 minutes
Makes 10 or 12 Tennis Rolls
Ingredients
3 Cups lightly measured flour (13 ounces) (370 grams )+ 1/2 Cup extra flour
For dusting and kneading
½ Cup sweetened condensed milk
1/2 Cup unsalted room temperature butter
1 Tsp sea salt
4 Tsp. instant yeast
1 Tsp. lemon zest
½ Cup cooking cream
½ Cup milk ( + ¼ Cup extra lukewarm milk or water )
Method:
Heat the oven ten minutes before baking at 330 degrees Fahrenheit
Measure and prepare all the ingredients first to be organized when cooking
Method:
Place the flour in a large bowl
Add the salt, lemon zest and butter
Mix to combine set aside
Reserve 1/4 Cup milk
Add the the remaining liquids in a saucepan over a very low heat to become lukewarm or at 110 degrees
Then add the yeast
Mix to combine
Allow the yeast to activate for five minutes to become foamy
Stir it down
Add the wet ingredients into the dry ingredients
Bring the ingredients together to form a soft dough
Sprinkle 1/4 cup flour on the work surface
Knead it then shape it into a dough ball
Place the dough in a grease large bowl
Cover with a Tea towel
Allow it to rest to proof for 30 minutes or until it has doubled in size
Punch it down to get rid of the air pockets
Place it on a floured work surface.
Divide it into 10 or 12 equal portions
Shape them into dough balls
Arrange them on a sheet pan
Allow them to rest for 30 minutes or until they are doubled in size
Place the pan on the third rack of the oven
Bake at 330 degrees for 25 to thirty minutes.
Or until they are golden and finishes
Allow the tennis rolls to cool completely on a wire rack
Serve warm or cold with cheese

Tips
A soft dough gave a soft light textured bread rolls
The cream add richness and color to the rolls
These breads can be kept for three days at room temperature.
Add more flour if the dough is too wet
Add liquid if it is too dry
To have the right consistency.
