🟢材料:
牛肉 500克
彩椒 175克
薑、蒜、蔥 適量
梳打粉 7.5克
紹興酒 1茶匙
生抽 2茶匙
老抽 2茶匙
糖 1茶匙
澱粉 1茶匙
蠔油 2湯匙
胡椒粉、油 適量

🟢做法:
1️⃣ 牛肉去掉筋膜和肥肉切片,用7.5克梳打粉加3湯匙水醃10分鐘,把牛肉清洗,洗掉梳打粉,吸乾水後,加入薑、胡椒粉、紹興酒、生抽、老抽、糖和澱粉,加1湯匙油拌勻,醃15分鐘。
2️⃣ 熱鍋下油,炒彩椒1分鐘盛出備用。
3️⃣ 熱鍋下油,爆香薑和蒜片,下牛肉翻炒(走油也可以)至差不多熟,加入彩椒和蔥白翻炒均勻,加入2湯匙蠔油炒匀,勾芡,撒上蔥段即可。

🟢Ingredients:
Beef - 500g
Bell pepper - 175g
Ginger, garlic, spring onions - as needed
Baking soda - 7.5g
Shaoxing wine - 1 tsp
Light soy sauce - 2 tsp
Dark soy sauce - 2 tsp
Sugar - 1 tsp
Cornstarch - 1 tsp
Oyster sauce - 2 tbsp
White pepper powder, Oil - as needed

🟢Cooking Directions:
1️⃣ Remove the fascia and fat from the beef and slice it. Marinate the beef in 7.5g of baking soda and 3 tablespoons of water for 10 minutes. Wash the beef to remove the baking soda, pat it dry, and add ginger, white pepper powder, Shaoxing wine, light soy sauce, dark soy sauce, sugar, cornstarch, and 1 tablespoon of oil. Mix well and marinate for 15 minutes.
2️⃣ Heat the wok with oil. Stir-fry the bell pepper for 1 minute and set it aside.
3️⃣ Heat the wok with oil and sauté the ginger and garlic until fragrant. Add the beef and stir-fry(or quickly deep fry) until almost cooked. Add the bell pepper and spring onions and stir-fry evenly. Add 2 tablespoons of oyster sauce and stir-fry evenly. Thicken the sauce, add chopped spring onions and serve.
