Parcha Kabab Written Recipe :

Ingredients:
Meat boneless 1 kg
Papaya paste 1 cup
Garlic paste 2 tbsp
Ginger paste 2 tbsp
Oil 1 cup
Salt 1 tsp
Whole red chilies 12-15
Chili powder 2 tbsp
All spice powder 2 tbsp
Onion (rings) 2 large
Whole green chilies 2 tbsp
Cumin crushed 2 tbsp
Coriander crushed 2 tbsp

Method:
Marinate meat with papaya paste, chili powder, salt, garlic, and ginger for 6 to 8 minutes. Heat oil add onion fry till golden color comes. Add whole red chilies, cumin, and coriander. Add meat cover and cook on low flame for 10 minutes. Add green chilies cook for 10 minutes more and serve.

Ingredients:

For Lentil:
Red lentil 125 gm
Gram lentil 125 gm
Onion sliced 1 medium
Tomato sliced 2
Chili powder 1 tbsp
Green chilies 5
Garlic 1 tbsp
Turmeric 1 tsp
Coriander crushed 1 tbsp
Salt 1 tsp
Cumin crushed 1 tbsp
Cardamom big 2
Cloves 4
Bay leaves 2

For Tempering:
Clarified butter 1 cup
Onion sliced 1 large
Cumin 1 tbsp
Garlic sliced 2 tbsp
Whole red chili 6-8
Boiled rice 250 gm

Method:
Boil all ingredients of lentils with 2 liters of water in a pan. When boil comes cook on low flame till it’s done. Add in a grinder to form a smooth paste. For tempering heat clarified butter add onion fry till a light golden color comes. Add garlic and fry well. Add cumin and whole red chilies, boil rice & serve with achar.
