Ingredients:-
2 Tbsp Coconut Oil
½ Tsp Cumin Seeds
2 Bay Leaf
7-8 whole Black Pepper
6-7 Curry Leaves
3-4 Green Chilli slit
¼ Cup Zucchini cubed
¼ Cup Capsicum cubed
¼ Cup Carrot cubed & boiled
¼ Cup French beans chopped & boiled
¼ Cup Cauliflower boiled
¼ Cup Green Peas boiled
½ Tsp Turmeric Powder
1 Tsp Garam Masala
¼ Tsp Coriander Powder
Salt to Taste
1 ½ Cup Coconut Milk
1 Cup Basmati Rice soaked
Hot Water as Required
Coriander Sprig for Garnish
Method:-
1. Place Borosil Vajra Ceramic Casserole on medium flame and heat coconut oil.
2. Add cumin seeds, bay leaf, whole black pepper, curry leaves, slit green chilli, cubed zucchini, cubed capsicum, boiled carrot, chopped French beans, boiled cauliflower and boiled cauliflower mix well.
3. Add turmeric powder, garam masala, coriander powder and salt mix well.
4. Now add coconut milk and soaked basmati rice stir well, scraping any bits off the bottom.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until the rice is tender and liquid is mostly absorbed.
6. Now switch off the flame and leave aside 10 minutes for rest.
7. Open the lid and fluff the rice with spoon and side out in a serving plate. Finally garnish with coriander sprig.
