Rassewale Aloo

Ingredients
Ghee 2 tbsp
Cumin Seeds(Jeera)- 1 tsp
Mustard seeds - 1 tsp
Curry leaves- 2 sprigs
Green chillies - 2
Tomatoes(medium)- 2
Potatoes (medium)- 4 to 5
Whole Red chilli- 1
Salt to taste
Turmeric pd- 1/2 tsp
Red chilli pd - 1 tbsp
Coriander pd - 1 tbsp
Water - 3 cups
Ginger (finely chopped)- 2 tsp
Achar masala - 2 tsp
Freshly chopped coriander leaves for garnish

For the Tadka
Ghee - 1 tsp
Curry leaves - 6-7

Method
- Firstly, cut the curry leaves & move aside.
* Take a box grater and grate the tomatoes.
* Finely chop the green chillies.
* Now cut the potatoes & cut them in small cubes. Leave two potatoes as it is.
* In a kadhai, add some ghee & let it heat
* Once heated, add cumin seeds, mustard seeds, curry leaves, green chili & whole red chili.
* Now add the grated tomatoes & let it cook for a while.
* Now season with salt, turmeric powder, red chili powder & coriander powder.
* Now add your diced potatoes mix all well.
* Add water to make rassa.
* Now mash the two potatoes into it.
* Followed by aam ka achaar.
* cover it and let it cool.
* Take a tadka pan, add some ghee snd let it heat.
* Now add chop ginger and curry leaves.
* Pour the Tadka over the sabzi.
* Garnish it with some chop coriander.
* serve hot with puris. .
