Bottarga is compressed grey mullet roe. This rich delicacy - made all around the Mediterranean - is best eaten in tiny slices drizzled with olive oil, cayenne pepper and lemon juice then served with cold white wine as a pre-prandial nibble. Our Greek bottarga is from an old family firm and the pieces are large and enrobed in wax. The wax keeps them moist for many months. It's chilled (not frozen) and will have a best before date at least a month ahead.
