🟢材料 : 📌可用7份蘿蔔1份粘米粉的重量計算,換成自己慣用的度量衡單位📌
蘿蔔(去皮淨重)1公斤,
粘米粉142克(1/7蘿蔔的重量),
澄麵35克,
瑤柱30克,
蝦米30克,
臘腸60克,
臘肉120克,
紅蔥頭1個,
水(浸瑤柱)142毫升(粘米粉的重量)

🟢做法:
1️⃣瑤柱、蝦米浸軟身,瑶柱撕碎,蝦米切碎,浸過的水留開粉用。
2️⃣ 臘腸、臘肉用熱水洗淨蒸10分鐘,切粒備用。
3️⃣ 蘿蔔洗淨, 部份切幼絲,部份切粗絲。
4️⃣ 爆香紅蔥頭,下蝦米爆香,下臘味炒香,下瑶柱絲炒勻盛出。
5️⃣ 蘿蔔炒至軟身,不用加水,蓋鍋蓋煮10分鐘,加入炒過的蝦米、臘味、瑶柱絲,下1湯匙糖、2湯匙蠔油(或適量雞粉)、少許胡椒粉、適量鹽翻炒均勻後關火。
6️⃣ 用142毫升的浸瑤柱水把粘米粉和澄麵調和,把粘米漿倒入蘿蔔中拌勻。蒸盤掃油,把蘿蔔粘米漿倒入蒸盤,大火蒸45~60分鐘, 視乎糕底厚薄,其間加入熱水以免蒸乾,
7️⃣出鍋灑上炒芝麻及蔥花,放雪櫃隔天才切件。

🟢 Ingredients:
Peeled white radish 1kg ,
Rice flour 142g ,(1/7 of the weight of the white radish)
Wheat starch 35g,
Dried scallops 30g,
Dried shrimps 30g,
Chinese sausage (or Chinese Preserved sausage) 60g ,
Chinese cured pork belly (Preserved pork) 120g ,
Shallot 1,
Soaked scallops' water 142ml (same as the weight of rice flour )

🟢 Steps:
1️⃣ Soak dried scallops and dried shrimps to soft, Tear the softened dried scallops into tiny shreds, Chop softened dried shrimps into tiny dices, Reserve the soaked scallops water for mixing with rice flour.
2️⃣ Wash Chinese sausage and Chinese cured pork belly with hot water, steam for 10 mins. then dice them.
3️⃣ Wash and shred the peeled white radish, Shred part of them into thick shreds and rest into thin shreds.
4️⃣ Sauté cut shallot, Add in chopped dried shrimps to sauté, Add in diced Chinese cured pork belly to sauté, Add in scallop shreds to stir-fry and scoop all out.
5️⃣ Stir-fry white radish shreds to soft without adding water in, Stew about for 10 minutes with lid on, Add back the sautéed dried shrimps, diced Chinese sausage and Chinese cured pork belly and dried scallop shreds, Add in 1 tablespoon of sugar, 2 tablespoons of oyster sauce ( or moderate amount of chicken bullion ), a bit of white pepper powder and moderate amount of salt, Stir-fry well then turn off the heat.
6️⃣ Use 142 ml of soaked-scallop water to mix with the rice flour and wheat starch, Pour the rice flour mixture into the fried white radish shreds and mix well, sweep oil on the foil cooking dish, Pour in the white radish and rice flour mixture into the foil cooking dish, Steam the mixture for 45 ~ 60 minutes, Time depends on the thickness of the paste, add hot water and watch the boiling water level to ensure sufficient water during steaming.
7️⃣ Spread fried sesame and chopped spring onions on the turnip cake after steaming, Cut the turnip cake to serve after cooled overnight in the fridge.
