Kasoy is an authentic Dai Lue dish from northern Laos. It's a savory meat sauce for rice noodle soup.

Ingredients for kasoy meat sauce:

4 lbs. ground pork shoulder meat

2 cups chopped fresh tomatoes (cherry tomatoes are best)

1 cup granulated chicken bouillon seasoning (I like the Totole brand, the yellow and green canister with a yellow chicken wearing a white apron)

1/4 cup msg

1 1/3 cup fresh chopped garlic

1/2 cup paprika

1 1/2 cup cooking oil (I used corn oil)

1 1/3 cup ferment bean paste (preferably Northern Laos Dai Lue's version)

**If you don't have access to the fermented bean paste, this Chinese brand by MASTERS is an alternative. It's not quite the same as the homemade Northern Laos Due Lue's fermented beans but it will work too! https://www.google.com/search?q=chili...
