斑斕杯子糕
Kuih Lompang Pandan /Pandan Kuih Kosui

準備10個陶瓷杯(5.5cm寬x4cm高)

粘米粉 - 60克
木薯粉 - 30克
細砂糖 - 80克
斑蘭汁 - 180毫升 (200毫升清水 加 8條斑蘭葉,剪段,用料理機打成汁)
梘水/堿水 1/2茶匙

椰絲層:
白椰絲 - 50克
鹽 - 小撮

將兩者參在一起蒸5分鐘

Rice flour-60g
Tapioca flour-30 g
Caster sugar-80g
Pandan Juice-180ml (8 pandan leaves cut into sections and add 200ml water, beat into juice with a food processor)
1/2 teaspoon of Lye/Alkaline water


p/s: (If you want a softer taste, you can add 70ml of water into the flour mixture)

Coconut layer:
Shredded White Coconut-50g
Salt-pinch
Steam for 5 minutes.
