〈CLASSIC PINEAPPLE BUNS〉
✎ Ingredients for 6 servings：
-Crust
Softened unsalted butter 48g
Caster sugar 40g
Egg yolk 1/2 pc
Baking powder 2g
Baking soda 1g
Cake flour 96g
Evaporated milk 1 tbsp (15g)
Condensed milk 1 tsp
Milk powder 6g

Main dough:
Bread flour 240g
Sugar 35g
Instant dry yeast 3g
Salt 3g
Milk 135g
Egg 30g
Unsalted butter 25g


✎ Suggested fermentation time：
First fermentation 60 minutes
Second fermenation 30-40 minutes

✎ Baking information：
Bake at 210°C for 5 minutes
Bake at 190°C for 15 minutes

◍ Notes：
The amount of water needs to be adjusted according to water absorption of flour, weather and humidity of the day
In hot weather, use lukewarm / cold water or cold milk or eggs; please use warm liquids in cold weather
Fermentation periods are for reference only，please adjust according to humidity and temperature on your baking day
The baking temperature and time are for reference only, please adjust according to the specifications of the oven
