〈Cinnamon Rolls〉
✎ Ingredients:
Yudane:
Bread flour 30g
Boiled hot water 30g

Main dough:
Bread flour 230g
Milk powder 10g
Sugar 30g
Instant dry yeast 4g
Salt 3g
Extra large egg 1 (60g)
Milk 100g
Unsalted butter 30g

Cinnamon fillings:
Unsalted butter 80g
Brown sugar 60g
Ground cinnamon 4g

✎ Suggested fermentation time:
First fermentation 38˚C (100˚F) for 45 minutes
Final fermentation at room temperature 50 minutes

✎ Baking information:
180˚C (360˚F) for 20-22 minutes

✎ Mould:
Paper mould

7:01 Prepare to bake


◍ Notes:
- The amount of water needs to be adjusted according to water absorption of flour, weather and humidity of the day
- In hot weather, use lukewarm / cold water or cold milk or eggs; please use warm liquids in cold weather
- Fermentation periods are for reference only,please adjust according to humidity and temperature on your baking day
- The baking temperature and time are for reference only, please adjust according to the specifications of the oven
