Butter Chicken

Serves: 6-8
Ingredients:
2 1/2 lbs of boneless chicken breast cut into small cubes
2 large onion sliced
4 large ripe tomatoes chopped
2 tsp of ginger and garlic paste
150 gram of chopped coriander
4 tbsp of sunflower oil
2 tsp of Kashmiri chili powder
2 tsp of coriander powder
1 1/2 tsp of cumin powder
1 tsp of garam masala powder
2 tsp of kasoori methi
1 tsp of tomato paste
1/2 cup of heavy cream
4 tbsp of butter
Salt to taste

Preparation

1) In a large bowl add the chicken, salt, 1 tsp of Kashmiri chili powder, 1 tsp of ginger, garlic paste, and 1/4 tsp of garam masala powder mix well.

2) Heat oil in a pan on medium low, add the chicken and let cook for 5 minutes. Remove onto a plate and set aside.

3) In the same oil add the onion let cook for 2 minutes, add the tomatoes, salt, coriander powder, cumin powder, leftover Kashmiri chili powder, chopped coriander, leftover ginger, garlic paste and rub the kasoori methi with the help of your palm and add to the pan add about a cup of water and cook on low heat for about 10-15 minutes.

4) After the gravy has been cooked let cool for 10 minutes then blend it into a smooth paste.

5) In the same pan add butter let melt then add the paste let cook for another 5 minutes on low heat. Add the cooked chicken continue the Cooking process until the gravy becomes a bit thick and then add the heavy cream and the left over garam masala turn off the heat and your butter chicken is ready to serve.

Serve with rice or naan
