Strong flour 170g
Milk 50g
Egg 50g
Salt 3g
Sugar 15g
Fresh yeast 10g
Butter 20g

Middle to high speed for about 15min until smooth
/
Proof at room temperature for 1hr until size doubles
/
Butter block 100g
Roll out to 15*15cm
Store in the refrigerator
/
Roll out to 15*30cm
Freeze for at least 1hr
/
Final size 25*25cm
Crop a circle of 25cm
/
mold size 18cm
/
Keep in the freezer
/
Flan mixture:
Egg 110g
Sugar 100g
Custard powder 55g
/
Milk 550g
Vanilla 1g
Bring to boil
Keep mixing for 3min
/
Butter 50g
/
Bake at 170°C for about 40min
/
Cool down completely
