High Protein Chicken Fajita Mac n Cheese! All for 568 Calories🍗🔥🧀

So indulgent, high in protein, cheesy and literally tastes like you’re eating a cheat meal but you’re not!

Macros Per Serving (4 Total)

568 Calories | 56g Protein | 54g Carbs | 13g Fat

Ingredients (4 Servings)

Fajita Seasoning Mix (1x)

1 Tsp Salt
1 Tsp Oregano
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tsp Paprika
1 Tsp Chilli Powder
1 Tsp Cumin

Chicken Marinade

750g Cubed Raw Chicken Breast
1.5x Fajita Seasoning Mix
2 Tsp Olive Oil
1 Whole Lime Juice
20g Light Butter (for cooking)

Fajita Mac n Cheese

1/2 White Onion finely chopped
1/2 Red Onion finely chopped
1/2 Red Bell Pepper finely chopped
1/2 Green Bell Pepper finely chopped
280ml any milk of you choice
150g Light Cream Cheese
35g Light Cheddar grated
35g Mozzarella
240g Uncooked Macaroni / 530g Cooked Macaroni
1/2 Lime Juice

Important Cooking Notes

When seasoning the chicken, make sure it’s well seasoned by adding more spices if needed
Cook the chicken on medium heat for 6-8 mins till golden brown then set aside
Cook the onions and peppers for 5mins at least till soft and fragrant
When adding the milk and cream cheese make sure the heat is on LOW to prevent the creamy sauce from splitting
Cook the macaroni in boiling water for 7-8 mins then drain and remove
After adding the macaroni and chicken back in the pan, give it all a final mix till well combined
Best to reheat this in a microwave or a pan with a splash of milk to make it creamy again!
