Sooji Dhokla Muffins
Ingredients
Semolina/Suji - 1 cup
Curd/Dahi - 1/2 cup
Salt - to taste
Turmeric powder/Haldi powder - a pinch
Sugar - 1/2 teaspoon
Ginger-Green chili - 1/2 teaspoon (grated)
Water - as required
Oil - 1 to 2 teaspoon
Fruit Salt - 1 teaspoon
Red chili powder/Lal mirch powder - to taste
Mustard seeds/Rai - 1 teaspoon
Sesame seeds/Til - 1/2 teaspoon
Green chili/Hari mirch - 1 no finely chopped
Curry leaves - a few
Instructions
1.In a bowl, put the suji. Add curd, salt to taste, turmeric powder, sugar and grated ginger-green chili. Mix well.
2.Then, put the water in small quantity and whisk together. Add more water as required, whisk it and make it medium consistency mixture.
3.Put 1 teaspoon of oil and mix well. Rest the mixture for 10 minutes. After 10 minutes, put the fruit salt in the mixture and mix.
4.Grease the muffin moulds or liners with oil. Put the mixture and sprinkle red chili powder on it. Boil water in a steamer and place the moulds on the steamer plate.
5.Cover and cook for 8 to 10 minutes. Once done, put a knife in the muffin, it should come out clean.
6.For tempering, heat 1 teaspoon of oil, put the mustard seeds, sesame seeds, green chili and curry leaves. Mix with the spoon and put it over each muffin.
7.The Suji Dhokla Muffins are ready to be served.

Suji Dhokla Muffins is a fusion dish. The suji dhokla is in the form of muffins. A completely new variety of snack. It is very simple and easy to cook. It requires ingredients like suji, curd, turmeric powder, and sugar. The ginger-green chili adds flavor to it. The garnishing of red chili powder gives it nice color and makes it tasty. You can either take fine or thick suji.
Instead of muffin mould, you can make the dish in dhokla pan or idli pan also.
Put the fruit salt in the mixture at the last or just before steaming.
